So, he's consistently misspelled "Canadian Pharmacy" or left out the space in the middle. Yet the strings "Canadian" and "Pharmacy" are still contained in the email.

Spam filters are more likely to be looking for discrete words/strings and doing ranking by how many of them are present than to be doing the more time consuming function of looking for longer strings and phrases.

He's also added not one but a whole assortment of much spammier misspelled strings to aid in recognition by filters that might not consider it so bad to be Canadian or a pharmacy. Each one of those different misspelled spammy words increases the spamminess rating further.

And he threw in some European characters just to top it off, perhaps not even realizing the «,» and characters would never occur in an English email.

I had those a couple months ago. I liked how 'motorcycles' appeared at the end of a list of electronic products.

Just got a bunch of spam mails having subject lines like these:

try cciajliss pppikllls for impoytoence combating
try cialiis ppiillls for impoptence
viaaqra piullj suoper piullj for potteency

And still the message bodies contain lines like these:

New pharmacy shop with the best medications and best doctor’s consultations.
Our new on-line pharmacy shop provides you with access to prescription drugs, health information and medical care from a pharmacy and drug store brand name you know.
Click here and enter to the universally recognized on-line pharmacy shop Only we have really necessary and effective medicaments.

So, nice try, moron, but didn't work really. I had to collect them from my trash bin anyway.

They aren't even making the slightest effort to be clearly understood, all in the hopes that they bypass spam filters (hint: they aren't.)
